Ingredients
chicken mini fillets
streaky bacon
barbecue sauce
cheese
cooking oil
vegetables / potatoes / chips / salad
Total prep & cooking time - 1 hour
1. Heat your oven to 180˚C
2. Put some oil in a frying pan and turn on the hob underneath to a high heat
3. Wrap one piece of bacon around each mini fillet then place in the frying pan to caramelise the outside of the bacon.
4. When the bacon is a good colour remove each fillet and place on some kitchen towel on a plate to remove excess oil taking care not to dislodge the bacon.
5. Pour some of your bbq sauce into an ovenproof dish then place the chicken wrapped bacon on top. Fill the dish with one layer of chicken only.
6. Pour bbq sauce onto the chicken.
7. Cover with grated cheese before cooking in the oven for approx 20 minutes until the chicken is cooked through and the cheese has melted.
8. Serve immediately with chips, vegetables or salad or a combination thereof.
Always take care with cooking, ovens, hot things and knives. Wash hands after touching meat etc etc etc.
